Today we bring you a simple recipe but full of flavor and health: Roasted Salmon with Vegetables and Lemon Oil. This option is perfect for a light dinner that will give you all the nutritional benefits of salmon, vegetables and the special touch of our extra virgin olive oil with lemon. Ingredients:

  • Salmon fillets
  • Lemon
  • Fennel bulb
  • Leek
  • Extra virgin olive oil with lemon -> see here

Instructions:

  1. To start, preheat your oven to 180ºC, making sure it is hot when you need it.

  2. While the oven heats, prepare the vegetables. Cut the fennel bulb and leek into thin slices. These vegetables will add a touch of freshness and a unique flavor to your dish. Place them in an oven-safe dish.

  3. Generously drizzle the vegetables with @canigooil extra virgin olive oil with lemon, which will give the recipe a fabulous and refreshing flavor. Add a touch of salt to taste.

  4. Place the pan in the preheated oven and bake the vegetables for about 15 minutes, or until golden and tender. During this time, we will take the opportunity to prepare the salmon.

  5. Wash the salmon fillets carefully and dry them well. This fish is a true nutritional gem, as it is a great source of omega 3, protein, iron, calcium, potassium and B vitamins.

  6. Cut the lemon into thin slices, as its acidity and freshness will enhance the flavor of the salmon.

  7. Once the vegetables are browned and ready, remove the dish from the oven. Arrange the salmon fillets on top of the vegetables, making sure they are evenly distributed.

  8. Add a touch of salt to the salmon, but don't overdo it, as the lemon olive oil and sliced ​​lemon will also add flavor.

  9. To enhance the flavor even more, drizzle the salmon fillets with more lemon extra virgin olive oil and place the lemon slices on top.

  10. Return the pan to the oven and cook for about 10 minutes, or until the salmon is cooked to your liking. Remember that salmon cooks quickly, so be careful to prevent it from drying out.

  11. Once the salmon is done, remove the pan from the oven. The aroma of salmon and roasted vegetables will fill your kitchen and whet your appetite.
